Ranch (non-USDA) slaughters for both lamb and pigs are available with approximately one month advanced notice.
Hudson Ranch is home to several heritage breeds of pigs, including Berkshire, Duroc, and Old Spotted, which we sell to private individuals, cut and wrapped. Reared on our pasturelands, the animals are nurtured on a daily diet of grain containing corn, soy, wheat and barley without any added hormones or antibiotics. Our happy swine’s favorite pastime is foraging the property for roots, grubs and acorns, which lends the meat a rich succulence. Hudson Ranch’s heritage hogs are featured in Cochon 555 competitions, local food festivals, and on some of the finest menus in northern California. Orders must be placed with us the Wednesday prior to the desired delivery week. Pigs are processed on Mondays at Marin Sun Farms in Petaluma, a local slaughterhouse. Hudson Ranch pasture raises St. Croix Hair Sheep, a rare heritage breed, which was brought to the US in 1996 from the Caribbean. Our flock is grass fed, without the addition of hormones or antibiotics. We typically slaughter lambs with a live weight of 80 lbs. (approximately 45 lbs. hot weight). Orders must be placed with us the Wednesday prior to the desired pick-up date. Lambs are processed on Wednesdays at Marin Sun Farms in Petaluma, a local slaughterhouse. To assure availability, two weeks advance notice is appreciated.
