Each variety was pressed and fermented individually. Fermentation was slow and cool before blocking MLF. We used a mix of 50% stainless steel barrels and 50% neutral oak barrels for the fermentation and a month of aging before evaluating for blending. The varieties were racked and blended in December before an additional 3 months of elevage. Bottled in February 2018.
Now in its 5th rendition, White Study continues to evolve into an ever more sophisticated wine of earthy minerality balanced by hints of apple blossom and spring herbs. The flavors are round, smooth and refreshing while maintaining upright and angular. It is an accessible white wine with charm and style. Onwards and Upwards.
